This is similar to how people seem to always know where their coworkers/friends live. Them having to look it up is omitted because the looking up of the address is an irrelevant detail to the plot that just wastes screentime and bores the viewer. Similarly, you don't need to see every little thing the bookie needs to do. All you need to see that there is a bookie who is taking bets. Anything else just wastes screentime.

Jul 2, 2019 at 18:03 comment added Paulie_D As I said, you may or may not see the bet being recorded but often you will. It's not really necessary to show it since, as you mentioned, it doesn't add much unless it's essential to the plot.
