i think the easiest way to explain this is that Cobb's team took the plane with Robert Fischer. Not the other way around. Saito bought the airline to ensure he would be able to get the team on whatever flight he booked.

based on the film? I think this was trying to wedge the joke, that worked well in the book into the film, In the book this happen when he first came to earth, he chose his name based on what he thought was the dominant life form.

@AndrewMartin, you miss the point I'm trying to make, I agree with you that this can happen in real life, and probably wouldn't be a plot hole. What i'm saying in this case is that Eva's character apologizes, so i'm not sure how there is even a suggestion of a plot hole.

Eh, sorry for stating the obvious, but there is a scene where Eva's character apologizes to Hitch, Hitch blows her off, hence the need for Hitch to apologize!
