Because they deliver an attentive audience that watch the commercials and the shows that accompany them. The making-of shows are marketable, and so eagerly produced. The producers get what they want - fees from the networks who will show the specials, and networks get what they want - advertising fees. Advertising is the sole money making activity of a network, who sell the airtime to market products. The shows are merely the wrapping that keeps the viewing audience coming back. Anything to further the marketing activity is fair game.
