I watched (a long time ago ... ) a movie, happening in an island, with a mutant shark (maybe a dolphin?), which in the movie's climax is able to walk. I think that in the end of the movie the shark itself or its offspring are able to escape.

I'm not exactly sure, but I guess is from the late 80's or from the 90's.

The "walking shark" bit makes me think it's Creature (1998) IMDB, which is based on the novel White Shark, by Peter Benchley (the guy who wrote Jaws).

Creature [Source]

The film starts with Richland, who was sent to visit a government facility on a remote island. He follows Peniston into the facility.

The head scientist Dr.Bishop shows them the projects he is working on, including a shark and dolphin hybrid with the ability to adapt to any environment, as well as a human and shark hybrid (the creature).
